11 1/2-pound porterhouse steak (1- to 1 1/4-inches thick)
2teaspoonsblack peppercorns, coarsely crushed
Remove steak from refrigerator. Let steak sit at room temperature at least 40 minutes.
Start your fire and let burn in the grill. Do not use charcoal lighter fluid. Fire is ready when the flames are lower and the smoke clears.
Pat steak dry and season both sides with peppercorns, oil and kosher salt. Coarsely crush the peppercorns with a mortar and pestle or put the peppercorns in a sealable plastic bag and coarsely crush them with the bottom of a heavy skillet, meat pounder or rolling pin.
Transfer steak with tongs to a small platter and let rest for half of the cooking time.
