Ingredients
2medium sweet potatoes
4flounder filets, 6 oz.
1/2teaspoonkosher salt
1/4teaspoonfreshly ground white pepper
1/4cupDijon style mustard
1lemon, optionalquartered
1/4cupflat leaf parsley, optionalchopped
Instructions
Bake the sweet potatoes for 30 minutes, cool and mash.
Add the salt, pepper and mustard and mix well.
Place the flounder in a square baking dish and coat with the sweet potato mixture.
Broil the fish for 15 minutes or until the potato crust is browned.
