Peppermint chocolate mousse bars

For the Crust:

  • 1 Box brownie mix of your choice, and prepared according to box directions

For the Mint Cream Layer:

  • 1 cup (1/2 pt.) cold whipping cream
  • 1/4 Tsp 1/4 to 1/2 teaspoon peppermint extract
  • 2 Drops green food color

For the Chocolate Mousse:

  • 1 Box instant chocolate pudding (3.4 oz) and ingredients as indicated on box.
  • 4 oz cool whip or similar whipped cream topping, thawed


For the Crust:

  • Prepare brownie per box directions. Cook in glass pie pan. I used 9x11 glass pan. Set aside to cool for 1 hour.

For the Mint Cream Layer:

  • Mix by hand 4 oz cool whip,1/4 to 1/2 teaspoon peppermint extract and several drops green food color in medium bowl until well blended. Place on top of cooled brownie layer. Chill 2 hours.

For the Chocolate Mousse:

  • Prepare chocolate pudding per directions on box. Slowly mix by hand the pudding and cool whip until well blended. Layer on top of mint cream layer and chill 2 hours.


  • Sprinkle crushed candy canes and left over cookies on top. Top with a drizzle hot fudge.


If you want to kick it up a notch, consider adding some peppermint schnapps to the pudding.
Crushed Andes Mints can also be added.
When working with peppermint extract, tread lightly. The flavor can go from wonderful to toothpaste very quickly.
