Strawberry Crepes with Peach Sauce

These delicious strawberry crepes with peach sauce are as easy as they are delicious.

Ingredients

Batter:

  • 4 eggs
  • 2 cups milk
  • 2 T. sugar
  • 1/2 tsp. vanilla
  • 1/4 tsp. salt
  • 2 cups flour
  • 4 T. butter Melted

Filling:

  • 2 Pkg Cream cheese 8oz
  • 1 tsp. vanilla
  • 16 oz. Cool Whip

Peach Sauce:

  • 2 quarts peaches drained
  • 1 cup brown sugar
  • 4 T. flour
  • 1/2 cup butter
  • 1/4 tsp. salt
  • 4 tsp. lemon juice
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. nutmeg

Instructions

  • Beat crepe batter. Fry batter in butter until golden. Makes 20 crepes. Can be made in advance and stored in fridge.
  • Spread filling over crepe. Roll.
  • Mix all peach sauce ingredients and heat on stove. Top crepes with sauce.
  • If I am making this as a dessert, I serve it with vanilla ice cream...as a breakfast I use whipped cream. Top it with fresh seasonal fruit, powdered sugar, or nuts!
