It’s that time of year again! Time to go back to school, back to the classroom, back to the playground, back to more responsibility. For many children this is exciting – even if they wish summer could last just a bit longer. For other children, school is a source of great anxiety or may become one because of the prevalence of bullying.
I have a new idea, a new experiment of sorts. Well new to me anyway – making my own fertilizer, at least my own bone meal. I have always been interested in being self sufficient and one of the best ways to do that is to use what you already have and not run to the store to buy something. I really don’t like having to buy fertilizers and I have been thinking of ways to make my own.
These Raspberry Coconut Bars are super simple to make and with their shortbread base, raspberry jam middle and desiccated coconut topping, they are a combination of sweet, crunchy and tart in one portable dessert!

Awhile ago I posted my banana loaf recipe topped with honey & walnuts. Today´s recipe is that exact same banana loaf but this time I added the walnuts in the batter and baked it in a muffin tin- Hence the title: Banana Walnut Bread Muffin Recipe! Did I mentioned that they are topped with a salted caramel and cream cheese mixture?

I found and adapted this recipe. It’s from The Jackson Sun. I found the recipe by accident when looking for Superbowl recipes. We don’t even watch the Superbowl but Carol’s team was in it and at one point she was thinking of having a party. I did find a good recipe and you are going to LOVE it!
