Strawberry Crepes with Peach Sauce
I first had these delicious crepes at a local restaurant and wanted to add them to my recipe file.
They are very light and a snap to make. With this being National Strawberry Week, I decided to present them to you!
The crepes are light with a cream cheese filling.
The peach sauce adds a unique flavor to the crepe. Topped with strawberry and whip cream the flavors all compliment each other.
These are the INGREDIENTS You will need:
Batter:
- 4 eggs
- 2 cups milk
- 2 T. sugar
- 1/2 tsp. vanilla
- 1/4 tsp. salt
- 2 cups flour
- 4 T. butter Melted
Filling:
- 2 Pkg Cream cheese 8oz
- 1 tsp. vanilla
- 16 oz. Cool Whip
Peach Sauce:
- 2 quarts peaches drained
- 1 cup brown sugar
- 4 T. flour
- 1/2 cup butter
- 1/4 tsp. salt
- 4 tsp. lemon juice
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1/4 tsp. nutmeg
The are the INSTRUCTIONS For preparation:
- Beat crepe batter. Fry batter in butter until golden. Makes 20 crepes. Can be made in advance and stored in fridge.
- Spread filling over crepe. Roll.
- Mix all peach sauce ingredients and heat on stove. Top crepes with sauce.
- If I am making this as a dessert, I serve it with vanilla ice cream…as a breakfast I use whipped cream. Top it with fresh seasonal fruit, powdered sugar, or nuts
When I served these crepes to my family they were all impressed. They raved about the unexpected flavor of the peach sauce.
The cream cheese filling was so easy to make. I just added some vanilla to the cream cheese and mixed in a tub of cool whip.
I made sure to lick the bowl! I never turn down cream cheese.
The strawberries were very fresh which added some texture to the crepe.
I will definitely have these on the menu for the next holiday! I hope you get a chance to enjoy these Strawberry Crepes and the Peach Sauce.
