Strawberry Crepes with Peach Sauce ~I first had these delicious crepes at a local restaurant and wanted to add them to my recipe file. They are very light and a snap to make. With this being National Strawberry Week, I decided to present them to you!

Red Velvet Crepes with Strawberries, Nutella Crepes with Fruit, Turtle Crepes with Custard Cream and of course Strawberry Crepes with Peach Sauce.
Strawberry Crepes with Peach Sauce
Ingredients
Batter:
- 4 eggs
- 2 cups milk
- 2 T. sugar
- 1/2 tsp. vanilla
- 1/4 tsp. salt
- 2 cups flour
- 4 T. butter Melted
Filling:
- 2 Pkg Cream cheese 8oz
- 1 tsp. vanilla
- 16 oz. Cool Whip
Peach Sauce:
- 2 quarts peaches drained
- 1 cup brown sugar
- 4 T. flour
- 1/2 cup butter
- 1/4 tsp. salt
- 4 tsp. lemon juice
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1/4 tsp. nutmeg
Instructions
- Beat crepe batter. Fry batter in butter until golden. Makes 20 crepes. Can be made in advance and stored in fridge.
- Spread filling over crepe. Roll.
- Mix all peach sauce ingredients and heat on stove. Top crepes with sauce.
- If I am making this as a dessert, I serve it with vanilla ice cream...as a breakfast I use whipped cream. Top it with fresh seasonal fruit, powdered sugar, or nuts!

Ooh, yummy. I grew up in England and my Dad was chief pancake-maker in our house: his version was always a thin crepe, not a thicker pancake. So these really call to me. The peach sauce looks deliciously easy, too.

Yum! Can you believe that for most of my life I didn’t like strawberries? haha! No worries though, now that I’ve matured I’ve come to realize how tasty they are! I’ll have to add this to my list of recipes with strawberries to try 🙂
