This is what was served during the week 9-23- to 9-27 in my home. On Tuesday morning was healthier breakfast of Gluten Free Waffles With Fresh Bananas and Strawberries. Wednesday we snacked on healthy Gluten Free Raspberry Ginger Muffins. Wrapping up this healthy week we enjoyed Apple Corn Muffins.

Gluten Free Waffles With Fresh Banana And Strawberries
I love this recipe. Besides being Gluten Free, it also incorporates fresh strawberries and bananas on top of the waffle. There is no need to add butter or syrup or even whip cream! This easy to make waffle is fast as well as delicious. The healthy waffle dry mix can be made ahead of time and stored in your pantry. Just add the wet ingredients and feed you hungry family!! Warm waffles and fruit make an excellent dinner also for those cooler fall and winter days. After a long workday and dragging kids to their after school activities this waffle is a welcome choice for the dinner table.
Gluten Free Raspberry Ginger Muffins
These raspberry ginger muffins can be made with fresh or frozen raspberries. You may substitute any fruit you wish if raspberries are out of season or you prefer a different taste. I also made them with orange marmalade and reduced the brown sugar to taste. The best part of these muffins is they are Gluten Free when prepared as directed.
Made from healthy ingredients, the muffins will make your kitchen smell like an autumn day. Cornmeal, apples and corn kernels combined with brown sugar are sweet, moist, yummy and a good way to get your kids to eat healthy. Of the many varieties available, Baldwin, Braeburn, Cortland, Fuji and Gala are among the best apples to use in baked goods. When buying apples, select those that are firm and even-colored and don’t have bruises, holes or soft spots.

Oh, my, these all look so delish. We were in iHOP this weekend and they have gluten-free waffles now! Nice to see a recipe we can make at home. Thinking those apple corn muffins might be good with chili. What say you?
Thank for the kind words. I love the gluten free waffles. They are so easy. And I made a bunch of the dry mix for those occasions you just need one now. The corn muffins, to me, are almost like “northern” corn bread. The apple makes them a bit moist. I think they would go great with chili. Now I have to try that!!
