If you haven’t noticed by now it is almost pumpkin spice season.
Companies are turning every food product into a pumpkin-flavored commodity.
It is a sign of autumn and cooler weather, and many coffee shops use this to their advantage by creating decadent pumpkin-flavored drinks.
Pumpkin is actually a very healthful vegetable. It is high in the antioxidant beta-carotene, which can help fight cancer.
Instead of a pumpkin spice latte, try this pumpkin smoothie—using REAL pumpkin!

My daughter-in-law gave me this article from the Mayo Clinic that include the recipe for Healthy Pumpkin Smoothie.
In the fall we make it instead of our normal breakfast.
Even my preteen granddaughter makes this with no trouble at all.
It gives you energy and a sense of invincibility because you know it is more than nourishing your body.
Having something in the morning that gives me energy and a positive attitude is important to me.
And this smoothie does the trick.
This Pumpkin smoothie is vegan and gluten free And that is a win win!
If you add the maple syrup you can be assured that bit of sweetness won’t ruin the balance.
Natural maple syrup is acceptable even on the Weight Watcher diet.
Being low calorie you can look forward to spending your carb totals in different ways. So give up those Pumpkin Lattes and enjoy the fresh taste of real pumpkin!
Fresh croissant, ham, swiss cheese, dijon mustard and strawberry jam make this sandwich a unique and tasty surprise.
I have seen it with powdered sugar sugar sprinkled on top for the slim and non diabetic folks.
I didn’t try one of these until I was in my late 40’s. Before that I only knew it in a joke context. “Why did the Count of Monte Cristo move to the desert? Answer: Because all of the sand which is there! ~Groan~
Mainly I had seen this Monte Cristo on regular bread.
It never interested me at all.
What a combination was ham, cheese, mustard and jam!?!
The women in my book club had decided to meet out for lunch this time. So we ended up at a local bistro style spot.
I was still leary when they all ordered this Monte Cristo Croissant Sandwich.
But once I was introduced to the Monte Cristo on a large fresh croissant the whole game changed!!
I enjoy buying large croissant at the bakery. They have so many uses!
Mixing them with nutella is just one of them.
So the idea of the jam wasn’t too far fetched. Nor was sifting a bit of powdered sugar for a better presentation.
This sandwich had caught my attention.
Being a huge ham and cheese gal I decided why fight it. The others at the table seemed to be enjoying their lunch.
So I went with the crowd and ordered.
After all, it came with a nice fruit cup, didn’t it? I wasn’t going to starve!
As I took my first bite I remembered what my mom always said about everything. “You don’t know if you will like it until you try.”
And as much as I hate to say, my mom was usually right.
This croissant was made in heaven.
And one of my friends looked over knowing I was a bit hesitant. When I smiled she told me that she knew I would like it. They were made with the snow of angel wings.
And I think she was right!
This recipe was a surprise to my family.
I was all set to make a cake mix rolo cookie, when I realized my cake mix was a brownie mix!
Having my heart set on making something yummy and gooey after promising my husband something new, I went ahead and improvised.
Thus, we have the Rolo Brownie!

You are all set to make a recipe. You know all the ingredients had been in the cupboard and then to find out someone used one of the main ingredients and never added it back to the grocery list?
Right now we have 4 active bakers in my home. And soon to be a 5th baking on her own.
With groceries not always being available these days this is now the scenario in my home.
We have become quite adept at getting creative at the last minute.
When I bake, I typically through additions in to my cakes, cookies and brownies.
The brownie mix was a great substitute for the cake mix cookies.
Our treat was actually better than the cookies would have been.
When comparing previous recipes I made with candies I rate the Rolo Brownies in the top 5.
Only smores, M&M, and twix brownies edge out the soft caramel addition.
Putting the caramel inside the brownie instead of just drizzled on as a sauce was a win win.
This brownie still has the moist and full bodied chocolate flavors.
But the addition of the chocolate covered soft caramel center candies bring your brownie to a higher level.
Served warm, the caramel melts in your mouth and adds a string of sweetness with every bite.
Rolo Chocolate Brownies travel easily
They are perfect as a treat in a luncheon box for the kids to bring to school. They also are a delicious addition for a working lunch on the job.
In our home we are loving this new addition to my recipe box.

This bread pudding casserole cooks in just 40 minutes. And while you wait you can prepare the sauce and syrup.
This recipe is a tad more involved than my normal recipes.
That is only because there are 3 parts to it. And each one is simple.
The bread pudding is like any other. Challah bread, some spices, milk and bourbon. That cooks off so don’t worry unless you have a medical issue.
The creme between the layers is a bit of milk, sugar, eggs and vanilla bean shavings.
But the best part of this whole Vanilla Bean Bread Pudding is the Coffee Syrup.
And OMG guys. It is special!!
A bit of brown sugar, sugar, water, vanilla and coffee Come together to make the best syrup in the world!
Not as thick or sweet as maple syrup but it runs slow enough down the bread pudding to give you eyes as well as your taste buds
The little over an hour you take to bring this bread pudding to your table is worth every minute.
i just can’t tell you how much we enjoyed this Vanilla Bean Bread Pudding for brunch. I expect to make it for extended family for our next holiday we can all attend.
And bonus!! I am looking for other dishes to be able to add the Coffee Syrup on.
