Serving this week 5-20 to 5-24. Welcome to Memorial Week! On Tuesday is a Strawberry Jello Poke Cake. Wednesday I am making a Red White and Blue Cheesecake. And I am ending the week with a Patriotic Brownie with a Pretzel Crust. Enjoy!

Strawberry Jello Poke Cake
This may surprise you, but the standard, easy angel food cake recipe is naturally dairy-free and gluten-free to boot! It uses loads of egg whites for all of the moisture, so no milk, sour cream, or heavy cream is required! The topping however isn’t dairy free. But the family will love this light dessert with any fresh fruit you add. The topping is is the best part though with this secret ingredient. Decorate your cake in any fashion you wish. This is a simple 4 ingredient no bake cheesecake that is light and refreshing. Simple add your berry toppings after you cut and serve. A cute addition to any holiday table! I am using my leftover strawberries and blueberries from my other two patriotic dishes that will be on my table this week!

Patriotic Brownie with a Pretzel Crust
Patriotic Brownie with a Pretzel Crust isn’t my only patriotic creation I am making for this holiday. I love making simple and easy every day desserts look so special. And if I can make the dish even a bit healthier than normal I call it a bonus! If you are pressed for time or ingredients you can always use your favorite box brownie mix and a ready made chocolate and caramel topping. The added fresh fruit is what makes this super yummy dessert a delightful presentation for any get together of family, a night with the girls, or just a quiet after dinner treat with your family. Everyone that tried this loved the taste. If you make it please share it and your experiences in the comments below. How would you change it to reflect your style?

    You’ve done it again Marilyn, what wonderful recipes! I love berries and these look absolutely wonderful. My mom used to make that jello poke cake for the 4th of July and arrange it like a flag… thanks for bringing those memories back.
