Serving this week 4-15 to 4-19. On Tuesday is my delicious Trinity Pie. Wednesday I am making a special Gluten Free Carrot Cake. And ending the week with a super easy dump and eat mix I named Spring Has Sprung M&M Chex Mix. Guess what is in it?

Trinity Pie
This pie is a combination of apple, cranberries and walnuts. While this pie is a good choice anytime, I like to make this for religious holidays to keep it as special treat. The combination of fruits and nuts satisfies the craving for a more traditional pie while providing a unique blend of flavors and textures. I like to use pie dough from the dairy aisle, but a made from scratch crust recipe can be found below. My crusts are so awful my family scoops the filling out and leaves the crust behind. Enjoy!

Gluten Free Carrot Cake
Now you can have your cake and eat it too! This isn’t your traditional carrot cake. Better than Grandma used to make but just as moist and delicious. This culinary treasure is easy to put together and full of secret goodness. And the best part of all is that it is Gluten Free so you can enjoy a big piece! You should have most or all the necessary ingredients already in your kitchen. If you don;t have the gluten free flour then an all-purpose flour will work just as well. My cake itself tastes almost like a spice cake but even better. You can also substitute a ready made cream cheese frosting to save time and trouble. This cake is a must try when you choose to partake in a small treat.

The batter is made from flour, sugar, brown sugar, carrots, cinnamon, eggs, pecans and raisins and pecans. All that is missing is that ray of sunshine. Or is it?

Spring Has Sprung M&M Chex Mix has finally made its debut! Can you believe it got lost in the flurry of posts and activity in March? I was fooling around organizing yet once again all my photos I wanted to post and found this one. But, with cashews, Rice Chex, and M&M Peanuts in the dish it is an evergreen dump and go treat good for any occasion. Or, none at all! Enjoy.
