Serving this week is 4-1 to 4-5, a meal Plan serving on Tuesday . My Watercress Soup. Wednesday I am making a Sweet Potato Bisque. And ending the week with a special flare, is my favorite cheesecake Espresso Cheesecake with Strawberries. Enjoy!

I cut up three onions, and roasted them briefly, then added some garlic and some whole wheat pastry flour, as well as some cut-up chilis and a jalapeno pepper, gradually adding some home made vegetable broth, and the potatoes (I used young, red skin potatoes I did not have to peel), and for the rest I finished it pretty much as per the recipe, except leaving out all dairy. The tastes of the vegetables just come out better when you leave out the oil and the animal products. People will come back for more. Instead of the whipped cream, I used some chia seeds. Your heart (and your stomach) will thank you.
Sweet Potato Bisque
This is another of my favorite ways to have veggies incorporated into a meal. This smooth and buttery bisque is a flavorful way to get the kids to enjoy veggies. When topped with a dollop of sour cream there is a delicious mix of textures and the taste tantalizes your taste buds.
Espresso Cheesecake With Strawberries
A hint of espresso can be tasted in this deliciously light cheesecake. Sitting in an Oreo Crust and topped with raspberries it is the perfect ending to a special meal. You can add any topping you like. I have chopped some coffee beans and found it was the perfect addition.
