Serving this week is 3-18 to 3-22, a meal Plan serving on Tuesday simple Baked Spaghetti, Wednesday will see 4 Cheese Stuffed Shells and ending the week is an Eggplant Parmigiana that will pass muster from the toughest vegetarian.

Baked Spaghetti is a bit different enough in texture and taste as well as preparation than the more popular version. The kids will love this dish because of the extra mozzarella cheese baked on top. You can even put this dish together ahead of time or the night before and then pop it in the oven and finish cooking it. This is an easy recipe and can be frozen. Make enough for more than one dinner at a time!

4 Cheese Stuffed Shells is the epitome of a comfort meal. In under 30 minutes you can have a warm, gooey, cheesy, meal on the table. The blend of 4 cheeses adds flavor and texture to the noodles. Eggplant Parmigiana With spaghetti. Sauce so good you will think your Italian grandma simmered it all day. Use any tomato sauce recipe you like. Whether homemade or jar, it won’t take away from the taste of this eggplant parmiagana. Maybe one day if I post my grandmothers “all day simmer” Italian sauce recipe I will reccomend that one. As for now, I let my sister make that one and happily have her jar some for me!! #pasta #eggplant #weightwatchers
