WHITE BEAN CHICKEN CHILI CROCK POT

What recipe is Weight Watchers, good for you, and only ONE bowl cook and cleanup?
Crock Pot White Bean Chicken Chili, that’s what!
I love Ruby Tuesday’s White Bean Chicken Chili, so I decided to get to work in my kitchen to re-create this wonderful chili recipe at home!
This recipe is made with hearty white beans, and tender chicken.
All this makes it very satisfying!
It’s sure to ‘hit the spot’ during a chilly day.
Crock Pot White Bean Chicken Chili just so happens to have the added bonus of being figure friendly!
There are times a red sauce Chili can find its way to your table.
But this white bean and chicken chili should have an equal chance to be featured.
The addition of northern beans, chicken broth, white corn, garlic powder and green chiles provide a mix of spiciness and extreme flavor to the chili.
If you don’t have a crockpot, you can make this chili on the stovetop in a large stock pot over medium heat. Cook for about 1 hour, stirring occasionally.
The option of using a stock pot or a crock pot allows you options for cooking your chili according to your own schedule.
Start your dinner before work or prepare it the night before.
Just add your chicken before to heat up the crock pot and tend to your schedule.
Have time during the day and don’t want to use the crock pot?
Simply use your stock pot and in one hour dinner will be on the table.
I prefer to use my crock pot. The aroma from the kitchen starts subtly and gets stronger as the day goes on.
I find that the ingredients have a chance marinate and combine and bring out a deeper flavor for the chili.

Loaded Baked Potato Soup

This healthy loaded baked potato soup recipe is inspired by the comforting flavor of fully loaded baked potatoes with bacon, shredded cheddar cheese, sour cream and chives.
To make a vegetarian version of this potato soup, omit the bacon and use “no-chicken” broth. Serve it with a green salad and crusty bread to clean up the bowl. It will warm you from your nose to your toes.
Anyone that reads my blog often knows I am a Midwest meat and potatoes girl.
I enjoy a baked potato for both a lunch by itself or a side with a larger meal.
They are easy to microwave and take little time to cook.
But baking a potato I believe adds much more flavor.
When I have potatoes that need to be used, this Loaded Baked Potato Soup is a common choice in my home.
There are just so many toppings that work well in this soup.
In addition to the sour cream, shredded cheese, bacon and chives I sometimes use broccoli or peppers.
Not only do they add more flavor, but texture and color are a big plus. And those additions make this soup a bit healthier.

When I can see the dish cooking on the stove and smell the aroma as it permeates my home I can’t help but sample the soup to see if there is yet something else I can add to improve the finished dish.

Chicken and Gnocchi Soup Slow Cooker

There is nothing better than crock pot meal.
You can prepare this Chicken and Gnocchi Soup before you leave the house for the day and it will be waiting for you when you need dinner.
Once you brown your chicken, you are ready to start adding your ingredients to the Crock Pot.
Plain cream of mushroom or cream of chicken soup will work in this recipe, but the roasted garlic variety adds lots of flavor.
You can freeze this soup. The soup stays well in the freezer for a couple of months when stored in an air-tight containers.
You can use leftover roitisserie chicken for extra flavor.
You may want to use less thyme than suggestedSome gnocchi is very large, you can cut these pieces in half.
You may want to add additional salt to the final soup, this soup does not have a lot of salt in it, especially if you use low-sodium chicken broth.
To make a thicker soup mix together 1 Tbs cornstarch and 1 Tbs cold water and stir until thickened.
The carrots, celery, onions, peas and thyme are all healthy ingredients. The chicken broth and cream of mushroom soup create the creamy base.
Adding them to the boneless skinless chicken and gnocchi creates an entirely healthy meal for you and your family.
Low in fats and sugars, you can lower the sodium by using a sodium free broth.
You get the flavor of pasta and chicken without the calories and higher barbs of other pasta meals.
All you need to complete the meal is some homemade bread or baguettes. A nice salad and a glass of wine wouldn’t hurt either!

Black Bean Soup

This Black Bean Soup is best when topped with sour cream and a few scallions.
I really wanted to make a soup I haven’t had in a while.
As I dug through my recipe box this Black Bean Soup jumped out at me.
I have been collecting recipes to try lately and this is one.
The image isn’t spectacular but the soup sure is!!
Since we are trying to eat healthier I have been trying foods I never would before.
I know this Black Bean Soup is a favorite of my my family so I decided to get out of my comfort zone and give it a fair try.
Veggies are always low on my list unless they are raw or came with a dip.
I get most of my veggies from salads and veggie trays.
My husband had a bowl of this soup at Panera and I grabbed a teaspoon to give it a taste.
I won’t lie, it was the sour cream on top that encouraged me.
I really expected this soup would be dry as it was so thick. I was prepared for it to also be tasteless.
To my surprise it was wonderful! I couldn’t stop tasting it and after a few minutes my husband flagged the waitress for another bowl for himself.
The addition of the sour cream made it a bit less thick and I could taste a hint of the sou cream.
The scallions gave it a sweet flavor as they weren’t too strong.
It also gave it a slight chewier texture since the beans were soft.
And the bacon didn’t hurt either. Since I am a bacon lover I may try to add a bit more bacon bits. I am not sure if that will give it too much of a bacon flavor.
Mu daughter-in-law is ALWAYS telling me that a good ingredient doesn’t always mean more is better.
But I am going to try it with my own bowl next time.
And there will be a next time.
My entire family loved the soup.
I served it with homemade baguettes and butter. I lam a dunker from way back. This combo was irresistible!!
