APPLE CORN MUFFINS

Made from healthy ingredients, these muffins will make your kitchen smell like an autumn day.
Cornmeal, apples and corn kernels combined with brown sugar are sweet, moist, yummy and a good way to get your kids to eat healthy.
Of the many varieties available, Baldwin, Braeburn, Cortland, Fuji and Gala are among the best apples to use in baked goods.
When buying apples, select those that are firm and even-colored and don’t have bruises, holes or soft spots.
These muffins do not crumble in your hand.
They are easy to eat. And when eaten warm with a bit of butter you will think you died and went to heaven.
Apple Corn Muffins make a great addition to lunch for the kids.
They even are great to take to work with your favorite coffee.

The aroma wafting through the kitchen assures you Fall could be on the way.
My family come running when they smell these apple corn Muffins baking. Whether it is these muffins or the traditional cornbread on the table they know a delicious meal is just ahead.
APPLESAUCE FRUIT CAKE

Not all fruitcake is a doorstop in disguise!
This recipe takes fruit cake to a whole new level.
This is the only fruitcake I will eat. My stepmom gave me this recipe. She has been giving this fruitcake to me for Christmas for 25 years.(no, I don’t have them all stored away.) LOL.
When I take this Fruit Cake to a gathering I always take my cake stand. I put it on the tiered platter along with a bit of cookies, fruit and coffee cakes.
Even cut in squares this Applesauce Fruit Cake looks more like a Spice cake than the traditional fruit cake.
When I bring it covered tightly, the smell of the rum catches attention as it wafts through the air.
You don’t have to worry about the alcohol in the cake. Cooking it evaporates it.
“Alcohol is volatile, meaning it evaporates easily. When the alcohol evaporates, it carries other flavors from the cake with it. Even if you hate fruitcake you have to try this Applesauce Fruitcake. It will change your mind.
What more can you ask for? Dried fruit, nuts, it is better than stollen!
Oh, did I mention there is rum? LOL
Go ahead and add a bit from the bottle. You may just find this recipe is a keeper! But the adults I serve love it.
They always try it and are surprised it is an Applesauce Fruit Cake.
ANDES MINT CHRISTMAS BARK

What is your definition of cozy?
Mine is this treat of white and dark chocolate, peppermint and colored sugar.
All you need to do is let this bark harden in the fridge and you are good to go.
Add some hot cocoa, pj’s, a crackling fire and a good movie for that warm and cozy night with someone special!
This Andes Mint Bark is a holiday tradition that will make everyone smile.
Every time you see a chocolate mint you will be flooded with memories of holidays with family.
If you like chocolate and mint then you really need to try this bark.
The beauty of serving this is you can be messy. Just crack the bark in pieces.
Most ingredients can be added to your own tastes.
You don’t need to have straight edges. Let it break where it wants.

This easy-to-make candy is perfect for gift giving. Wrap individual portions in festive-colored cellophane tied with ribbon for a portion-controlled treat.Variation:
Prepare as directed, using one of the following flavor options:
Chocolate-Peanut Butter
Marble Bark: Omit pecans and stir 1/4 cup creamy peanut butter into the melted white chocolate before spooning onto prepared baking sheet as directed.
Chocolate-Mint Marble Bark: add 5 to 7 drops green food coloring and 1 tsp. peppermint extract into the melted white chocolate before spooning onto prepared baking sheet as directed.
Double Chocolate Bark:
Use 2 pkg. (4 oz. each) BAKER’S Semi-Sweet Baking Chocolate and 1 pkg. (4 oz.) BAKER’S Unsweetened Baking Chocolate.
This candy will not melt in your hands. You will finish it before it has a chance.
NO BAKE STRAWBERRY CHEESECAKE WITH OREO CRUST

This No Bake Strawberry Cheesecake has the texture of a Chiffon Pie.

Anyone reading my blog regularly knows I love to make cheesecakes.
I am very sure to make them light enough you can actually finish your entire piece.
We never have leftover cheesecake in my home.
And when I bring one to an event I only have the empty plate go home with me.
The special part of this particular cheesecake happens to be the oreo crust.
The crust keeps the cheesecake stay together so there is no mess.
There is also no fuss since this cheesecake is NO Bake!! Yes. You heard me right. No Bake!!

Going to try an apple dump cake this week. Love the sound of your apple corn muffins. Might give them a go to serve with my chili later in the week after the leftovers are gone.
Those muffins with Chili sound wonderful!! What a great thought Leslie. I was thinking of either an apple dump cake, or poke cake. I will try the poke cake and we can compare notes. Have a happy and safe Thanksgiving! Hugz
