Since this is the month of Mac and Cheese I thought I would spice it up a bit.
Green Chile Mac and Cheese is proof that mac n cheese is not just for kids!
I have older children in my home.
Those that love spicier dishes enjoyed the surprise in the flavors with that first bite.
Miss J and I keep things on the milder side, so we ate the dish with green, yellow, red and orange mini peppers It was perfect!
There is a great list of pepper type with the degree of heat and and some uses at Chili Pepper Madness.
Whether you make your own noodles or grate your own cheese, adding these green chile peppers will spice up your dish.
This Mac and Cheese is creamy and moist.
And is doesn’t get dry the longer it is on your plate.
A warm French Baguette with the butter dripping on your fingers is a perfect companion for this dish.
There is a lot of room for changes in this recipe.
Want it hotter? Add the spiciness for your own palette.
Want it cheesier? Havarti cheese, Gouda cheese1 or Swiss cheese.
Or add them all for more flavor and textures.
The cheesy goodness brings out the flavor of the chiles to perfection.
If you are looking for a change from your go to version of this dish, then this is just what the chef ordered!
The strength and heat of the hatch green peppers used will bring the spice level to make your mouth water. Enjoy!
We have this new restaurant near us called mac n brewz.
The whole menu is different mac n cheese recipes. If you can think of it then they can make it.
I ordered a baked truffle mac n cheese that literally made me rethink my carb intake.
This dish was not in the least bit dry and the flavors were out of this world.
The wild mushrooms, sun dried tomatoes and parmesan crust were worthy of the best Italian fare I have ever been blessed to eat.
This is a must make recipe. Kids food fit for an adult. This is not your kid’s Kraft mac n cheese!
I found though that just like truffle fries the seasonings are not my cup of tea.
Other than that though I did enjoy the mac and cheese.
The sun dried tomatoes and all the spices were a different taste than I was expecting. It was very delicious.
The panko crust topped off the dish and kept it warm as I ate.
My husband likes the dish too. I know you will!

Mac and cheese is a family favorite in our home so we like to spice it up once in a while with a few add ons.
Crab and shrimp are always in season around here and easy to prepare.
The frozen brands in the store will work just as well. And they are time friendly, too. Mock crab will do to keep the costs down.
Use your favorite combinations of seafood to make this dish.
I have used shrimp and crab here. But salmon, cod, trout or whitefish also are great add ons.
Don’t be put off by the number of steps in this dish. Most of them are adding each ingredient at the correct time.
If you buy mainly already prepared shrimp and grated cheeses this recipe will practically make itself!
If you like your mac and cheese a little creamier, add another half cup of milk to the recipe when adding the evaporated milk.
This dish in my opinion is the epitome of comfort food.
It takes the comfort food of the mac and cheese pastas as well as the cheeses and adds a flair to a classic dish.
it is still fit for the kids, but takes this dish to another level.
When served at a luncheon or special occasion, your guests will be amazed at just how delicious mac and cheese can be.
At that first bite, any adult will raise their eyebrows at the unexpected flavors.
Using such healthy additions will cause the adults in the room to tell the kiddos, “Nah. You wouldn’t like this.” and point to the standard variety on another plate.
They will never be the wiser.
Easy and quick, you can serve up a warm and filling meal after a long and stressful day and still be able to have time to relax after dinner..
