
Rolo Brownies
This recipe was a surprise to my family.
I was all set to make a cake mix rolo cookie, when I realized my cake mix was a brownie mix!
Having my heart set on making something yummy and gooey after promising my husband something new, I went ahead and improvised.
Thus, we have the Rolo Brownie!

You are all set to make a recipe. You know all the ingredients had been in the cupboard and then to find out someone used one of the main ingredients and never added it back to the grocery list?
Right now we have 4 active bakers in my home. And soon to be a 5th baking on her own.
With groceries not always being available these days this is now the scenario in my home.
We have become quite adept at getting creative at the last minute.
When I bake, I typically through additions in to my cakes, cookies and brownies.
The brownie mix was a great substitute for the cake mix cookies.
Our treat was actually better than the cookies would have been.
When comparing previous recipes I made with candies I rate the Rolo Brownies in the top 5.
Only smores, M&M, and twix brownies edge out the soft caramel addition.
Putting the caramel inside the brownie instead of just drizzled on as a sauce was a win win.
These are the INGREDIENTS You will need:
- 1 box brownie mix
- 2 eggs
- 1/3 cup oil
- 8 oz bag mini rolo candies unwrapped
These are the INSTRUCTIONS For preparation:
- Preheat oven to 350 degrees. Use a 9×9 non stick pan.
- Mix together the first three ingredients until smooth.
- Mix by hand the brownie mixture and the rolos until well covered. Pour batter into pan.
- Bake for about 35 minutes. Sprinkle with powdered sugar.
- Delicious served warm or at room temperature.
This brownie still has the moist and full bodied chocolate flavors.
But the addition of the chocolate covered soft caramel center candies bring your brownie to a higher level.
Served warm, the caramel melts in your mouth and adds a string of sweetness with every bite.
Rolo Chocolate Brownies travel easily
They are perfect as a treat in a luncheon box for the kids to bring to school. They also are a delicious addition for a working lunch on the job.
In our home we are loving this new addition to my recipe box.

Back when I used to sell Pampered Chef, I would do a Rolo brownie recipe demonstation, and they were always a huge hit! I can imagine these taste just as amazing 😉

Rolos have always been a particular favourite of mine, I love them as they come, in a cookie, and I’m sure I’d love them in a brownie!
I bet you would love Rolos in a brownie Julie! They don’t melt as well as a caramel, but the texture doesn’t suffer. Stay safe and enjoy your day!
