Red Velvet Whoopie Pie

Red Velvet Whoopie Pies ~Red Velvet has quickly become the most favorite food in my life. I have this love/hate relationship with it. I love the presentation of the the dish, but I hate how it dyes my hands, sink and tools bloody red. None the less, I have more than 15 boxes in my pantry!

Ingredients

Cake

  • 1 red velvet cake mix
  • 6 Tbs unsalted butter
  • 1 egg
  • 1/3 cup milk

Filling

  • 1 box vanilla frosting
  • 6 Tbs unsalted butter
  • 1 1/2 Tbs milk if needed

Instructions

Cake

  • Preheat oven to 375 F.
  • Grease and flour two cookie sheets or use a Whoopie pan.
  • Mix together butter and half the cake mix until smooth.
  • Add egg, milk, and remaining cake mix.
  • Drop by level spoons onto prepared cookie sheets using a small ice cream scoop or melon baller.
  • Bake for 30 mns.
  • Cool on cookie sheet for 5 mns then move to cooling rack.

Filling

  • Place frosting mix in bowl and add butter. Mix on high until fluffy. If mix is dry add milk a bit at a time until desired consistency is reached.
  • Top each pie with icing on the flat side. Top each pie with one of the remaining iced pies.
