
Peppermint and Chocolate Mousse Bars with Brownie Crust
Peppermint chocolate mousse bars! Brownie base with chocolate custard and peppermint mousse. Drizzled in homemade cocoa syrup and topped with crushed candy canes! You can’t get anymore Holiday Season than this!
I am a pushover for peppermint, hot fudge and brownies. But add the chocolate mousse to the mix and I can’t resist!
These are the INGREDIENTS you will need:
For the Crust:
- 1 Box brownie mix of your choice, and prepared according to box directions
For the Mint Cream Layer:
- 1 cup (1/2 pt.) cold whipping cream
- 1/4 Tsp 1/4 to 1/2 teaspoon peppermint extract
- 2 Drops green food color
For the Chocolate Mousse:
- 1 Box instant chocolate pudding (3.4 oz) and ingredients as indicated on box.
- 4 oz cool whip or similar whipped cream topping, thawed
These are the INSTRUCTIONS for preparation:
For the Crust:
- Prepare brownie per box directions. Cook in glass pie pan. I used 9×11 glass pan. Set aside to cool for 1 hour.
For the Mint Cream Layer:
- Mix by hand 4 oz cool whip,1/4 to 1/2 teaspoon peppermint extract and several drops green food color in medium bowl until well blended. Place on top of cooled brownie layer. Chill 2 hours.
For the Chocolate Mousse:
- Prepare chocolate pudding per directions on box. Slowly mix by hand the pudding and cool whip until well blended. Layer on top of mint cream layer and chill 2 hours.
Topping:
- Sprinkle crushed candy canes and left over cookies on top. Top with a drizzle hot fudge.
NOTES:
Optional: If you want to kick it up a notch, consider adding some peppermint schnapps to the pudding.Crushed Andes Mints can also be added.
NOTE: When working with peppermint extract, tread lightly. The flavor can go from wonderful to toothpaste very quickly.
Christmas season doesn’t start in my home without a gallon of mint ice cream and a jar of hot fudge sauce.
This has been a tradition since I was a kid. Unfortunately though only my daughter-in-law agrees with me. But that is fine. More for us!!
These Peppermint Chocolate Mousse Bars pick up the slack when the ice cream is gone. They have just the right balance of flavors to make you want seconds.
This recipe is perfect as it only needs whipped cream, a pudding mix, brownie mix and candy canes. Add some peppermint extract and food color and cool and you are ready to serve!
