Now for the news around here.
Can you believe that Thanksgiving is less than a week away?
My husband has shopped for all the ingredients we need to make our dinner.
Except for the items that need to be very fresh.
I will be doing a lot less cooking this year. My Daughter in law wants to start taking over and I am ok with just observing.
She loves to cook. And with many dishes she is better than I at creating masterpieces.
Since she is a vegetarian she also has more experience eating those dishes. So I leave her alone. It works well.
And my granddaughter will be making two dishes from our family tradition cookbook.
I can’t wait to watch her. She chatters the entire time and tells me the all the background on her methods. She cracks me up.
All 5 of us have our own specialty. This year my job is the turkey.
Amy got a fresh one from her boss so this will be the second time I am cooking from fresh.
It is similar to a baked thawed turkey. But the advantage is I can separate the skin from the meat and add my spices inside those pockets.
This year I am making it in the convention oven. A fresh turkey works better for me when I cook it this way.
I have a recipe and complete guide with explanations at How to Cook a Turkey in a Convection Oven.
I have to admit I made my first convection oven turkey as a normal meal.
For the holiday I use tried and true recipes. I am nervous otherwise.
This year we will have just the 6 of us. My older son will be with us.
I am not sure if I can serve a meal for 6.
We usually have between 24 and 36. But we will zoom after dessert.
I know I will have many leftovers. I am getting some containers I don’t need back and dropping off the extra sides and desserts to those that need it or will be alone.
Have a Happy Holiday. If you aren’t in the U.S. then have a wonderful and special week.
Everyone do something special just for YOU! I am getting a spa day thrown by Jovie. It should be fun.
