Now for the news around here.
Heh everyone, still sane??? Isn’t this the longest 9 week weekend ever?
I think I am starting to lose it.
My daughter-in-law is a vegetarian and has to have her own dinners when we eat meat.
But she DOES love Corned Beef and Cabbage. I prepare it a few times each year just for her.
I planned on firing up the crock pot at 8:30 since it takes 9 hours to make. But with a repair man in the kitchen I was 2 hours late.
Fast forward 3 hours. I had added garlic for the first time and was nervous if I over did it. But I couldn’t smell it cooking and quickly dismissed my fears.
You probably figured out about now there was a glitch. I knew I had plugged the crock pot in and set the dial to high. My husband tried to move the pot and burned himself.
Imagine my surprise when I went in to see how it was doing and the pot was COLD.
Some how someone pulled the plug thinking it was the coffee pot. The rest is history.
So ok. Plan B.
I ran around the kitchen like a chicken with no head looking for a roasting pan. I must have taken it with a meal in it and forgotten to bring it home.
Ok. Plan C.
I went through all my pans and found one that fit the bill. But It was thin metal and I am not sure it is oven safe. Nothing on the Pfaltzgraph website said one way or another.
So, Amy and I bit the bullet and used it.
Dumping all the veggies and liquid into the roaster looked like an episode of the 3 Stooges. We both maneuvered around and finally decide who would hold what part of the bag. Yes, you guessed it. She hedged and I squeezed and half the liquid ended up on the counter, my shirt and her feet.
It did work out well though. Even with all the mistakes we ended up eating sooner than had we finished with the crock pot.
The meal was delicious and we all settled in to play a game.
