
Cream of Broccoli Soup
When I make soup from scratch you can bet it is more than likely to be a cream based soup.
I don’t make my own broth but this is still delicious and warm when served to the family.
In the winter it is a meal in itself when half a sandwich is added.
In the warmer weather I still serve soup but pair it with a fresh salad made with greens and veggies straight from the garden.
You will definitely be upping your game when you place this soup on the table and serve to a hungry family.
These are the INGREDIENTS you will need:
- 8 Tbsp Butter splt between 6 and 2 tbs
- 2/3 Cup Flour
- 1/4 Cup Chopped onion
- 4 Cups broccoli florets, cut into bite sized pieces (fresh or frozen)
- 6 Cups chicken broth (or you can use the 49 1/2 oz can)
- 3/4 Cup Half and Half creamer
- 1 tsp Salt
- 1/4 tsp Pepper
These are the INSTRUCTIONS for preparation:
- In a small saucepan over low heat, melt the 6 T. butter.
- Add in the flour and whisk until blended, do not brown. Remove from heat and set aside.
- In a large saucepan, melt the 2 T. butter. Add onion and cook until tender. Add chopped broccoli florets, cook and stir about 6 minutes.
- Add the chicken broth. Increase the heat at this point and bring to a boil.
- Whisking constantly, add the flour mixture.
- Cook and stir until soup is thickened and bubbly.
- Add in the salt, pepper, and half & half.
- Heat through and serve hot.
NOTES:
*The soup will thicken upon standing.
*You can substitute cauliflower or broccoflower in place of the broccoli.
In the winter, when the snow is on the ground and the air is brisk, this Cream of Broccoli Soup screams to be served.
Creamy buttery white sauce with fresh florets of broccoli floating in this soup will warm the family up on a cold winter day.

Their socks soaking wet. The mittens heavy from the frozen snow.
Their hats and scarves discarded on the floor. The dissatisfaction of snow pants refusing to pull off.
Ahhh, sweet memories.
While they follow your orders to hang up the wet clothes and take care of their boots you will be in the kitchen giving the final stir to your Cream of Broccoli Soup!
The best part of this scenario is the aroma coming from the kitchen.
The butter mixing with the half and half is the first taste you get of the goodness in the bowl.
Freshly cooked broccoli swims among the creamy base. It provides not only flavor but color too.
When you add oyster crackers to the warm soup you get the final touches needed.
The textures of the softening crackers, broccoli and creamy base bring the entire dish together.
The flavors surround the ingredients wrapping them together like a nice warm hug.
