I love mint and chocolate. The creme de menthe liqueur add just the right amount mint and color to this dish. You can’t mess it up.
The cooke crust is made from Girl Scout Cookie Thin Mints.
These freeze well so be sure to get a few extra boxes as this cheesecake also goes well at St Patrick Day!
This thin mint cheesecake has Girl Scout cookies and creme de menthe liqueur mixed inside the filling. My signature cookie crust is on board and then drenched in a Home Made Hot Fudge

Grasshopper Thin Mint Cheesecake
- 3 lbs cream cheese
- 16 oz Whipped Cream
- 1 cup sugar
- 2 Tbs vanilla
- 1 box thin mints – crushed
- 1/2 cup creme de menthe liqueur
- 3 cups Oreo Crumbs
- 3/4 cup soft butter
- 10 crushed Thin Mints
- Whip filling ingredients
- Once crust is cooled, pour filling into the pan Place in refrigerator and let sit overnight
- combine ingredients
- Smash and press into 9 inch spring pan for crust let cool
- Before serving, sprinkle with crushed Thin Mints
