
Grapefruit Avocado Salad with Pomegranate
Do you like a nice fresh salad during the day?
What if it is mixed with grapefruit, pomegranate and avocado?
Add a nice homemade Honey and Lemon dressing?
I bet by now your taste buds are saying, “yes please!”
This Grapefruit Avocado Salad with Pomegranate arils deliver a great new flavor combination.
The optional addition of walnuts give an additional crunchy texture.
Yhese are the INGREDIENTS you will need:
Salad:
- 1 large grapefruit, peeled and sectioned
- 2 large avocados
- 15 oz mixed greens
- 2 Pomegranates arils, (the inside seeds minus membrane)
Honey-Lemon Dressing:
- 1 tablespoon plus 2 teaspoons fresh lemon juice
- 1 teaspoon finely grated lemon zest
- 1 tablespoon honey
- 1/4 cup extra-virgin olive oil
- 2 Dashes Kosher salt and freshly ground pepper, to taste
These are the INSTRUCTIONS for preparation:
Salad:
- Cut avocado into slices just before serving.
- Top mixed greens with grapefruit sections, arils and avocado. Dress with Honey-Lemon dressing and serve.
Honey-Lemon Dressing:
- In a small bowl, whisk the lemon juice with the lemon zest and honey.
- Whisk in the olive oil and season with salt and pepper.
- Top salad with dressing and serve.
Arils:
- Wash the pomegranate well before starting. After washing, slice the pomegranate in half horizontally.
- Place the pomegranate, cut side down in your hand. Place a deep, medium-sized bowl in the sink to catch the seeds.
- Take a sturdy spatula or a wooden spoon and begin to give a hard and firm whack on the top surface of the pom. Whack hard enough for all the seeds to be released into the bowl.
- Repeat with the other half. You’ll have a bit of white membrane mixed in with the seeds. Just pick this out and discard.
NOTES:
Store pomegranate arils (seeds) in the refrigerator in an airtight container or zippered bag.Arils will keep this way for 4-5 days. They can also be frozen and stored for several months.To freeze, line a sheet pan with parchment paper or waxed paper. Spread arils in a single layer, uncovered, until frozen, 1-2 hours. Once frozen, transfer to an airtight storage container or a zippered freezer bag.
You might not think of grapefruit and avocado as a great pairing but they really are.
Grapefruit brings a sour and sweet taste to the salad.
Avocado adds a creamy mildness that isn’t overpowered by the grapefruit.
Pomegranate arils are tender, sweet and tart all in one.
Put them in a salad together and you can have the taste of summer any time of the year.
The honey-lemon dressing drizzled on top adds just enough sweetness to balance the grapefruit but not drown it out. And the honey lemon dressing is the glue that holds it all together.
Avrils can be messy to retrieve but it is well worth the trouble.
Just whack the halved pomegranate as hard as you can and the seeds fall right out!
The arils will keep in the refrigerator for 4-5 days but can also be frozen
You can buy arils ready for use but they are expensive! Store bought or homemade is your choice.
Serve this salad as a meal in itself or add it as a side dish to your main meal.
You can also take it for lunch to the workplace or school.
I am sure you will draw attention as it is so colorful and uncommon!

This salad has a really interesting combination of flavours. Grapefruit is one of my favorite fruits, its so light and refreshing. I had not considered it in a salad before, but this looks fantastic Marilyn.
