This cucumber and onion salad is not your average side dish. And it comes with a twist!

This cucumber and onions salad is not your average side dish. And it comes with a twist! To make the cucumbers a bit softer and the flavors marinate deep into the dish you need to add boiling water to the mix and then refrigerate until cold. In just over an hour you can serve them with the meal.

Ingredients

  • 4 cucumbers thinly sliced
  • 1 small white onion thinly sliced
  • 1 cup white vinegar
  • 1/2 cup water
  • 3/4 cup white sugar
  • 1 tablespoon dried dill or to taste

Instructions

  • Toss together the cucumbers and onion in a large bowl.
  • Combine the vinegar, water and sugar in a saucepan over medium-high heat.
  • Bring to a boil, and pour over the cucumber and onions.
  • Stir in dill, cover, and refrigerate until cold. This can also be eaten at room temperature, but be sure to allow the cucumbers to marinate for at least 1 hour.

    That’s an interesting way to make the cucumbers softer. I am so missing my home grown cucumbers this year. It was so easy to just go outside and pick some, now I have to pick them at the store. – Margy

      I love cukes! I hope ours do a bit better this year. My zucchini though have been humungous. Good to hear the weather hasn’t stopped them from starting.

    That’s really interesting. I wouldn’t have thought about pouring the hot vinegar mix over the cucumbers first, but it must make such a difference to the taste. All tangy and refreshing

      The vinegar does so much to the veggied Michelle. It maskes them a bit softer. It locks in the freshness and flavors, and it keeps them from browning! Win win!

    I will have to try this with the boiling water. I make this salad often in the spring and summer but have never used boiling water.

      The boiling water makes the cukes softer and they keep from getting mushy when you coll them. The flavors are easier to marinate in the dish too. Enjoy! let me know what you think.
