
Crock Pot Corned Beef and Cabbage 2 Ways
No more dry corned beef!
Cook this in your slow cooker all day and you’re guaranteed success!
Corned Beef and Cabbage is a favorite in our home on St. Patrick’s Day.
There is nothing better than throwing a few ingredients into the crock pot and smelling it cooking all day.
Even if you are a working mom, coming home to a house smelling of a tasty dinner ready to serve your family is a treat all on its own!
My Husband just loves cabbage! He will eat it in any form or recipe.
i have only ever liked my cabbage in Cole Slaw.
Well in my home that was not to last long.
I made Corned Beef and Cabbage for the first time after my dughter-in-law used this Crock Pot recipe.
These are the INGREDIENTS you will need:
- 4 Large carrots, peeled and cut into matchstick pieces
- 10 small baby red potatoes, quartered
- 1 medium onion, peeled and cut into bite-sized pieces
- 32 Oz Vegetable broth
- 4 pound corned beef brisket with spice packet
- 6 Oz Beer, optional
- 1 Cup Water
- 1 small head cabbage, cut in 4 wedges
These are the INSTRUCTIONS For preparation:
For Crock Pot Version:
- Place the carrots, potatoes, and onion into the bottom of a slow cooker, pour in the water, and place the brisket on top of the vegetables. Pour the beer over the brisket. Sprinkle on the spices from the packet, cover, and set the cooker on High.
- Cook the brisket for about 8 hours. An hour before serving, stir in the cabbage and cook for 1 more hour.
For Oven Version:
- Set the oven to 350°F. Pour the broth and water in a roasting pan.
- Place the beef, fat side-up, into the pan. Spread the seasoning packet on the corned beef. Arrange the onions, carrots, potatoes and cabbage around the beef in the pan.
- Cover the pan. Bake for 2 hours.
- Remove the cover.
- Bake, uncovered, for 1 hour or until the beef and vegetables are fork-tender.
- Let stand for 10 minutes. Place the beef and vegetables into a serving dish. Strain the broth mixture and serve with the beef and vegetables.
NOTES
I also crushed a clove of garlic and mixed in the broth.
Instead of 10 baby red potatoes substitute 4 large Idaho potatoes.
I was no longer intimidated to try making it.
The hardest part was cutting the head of cabbage.
The longer the meal cooked the stronger the aroma filled my kitchen.
And the more I fell in love with this dish.
The recipe couldn’t be simpler.
Now not a birthday or St Patrick’s Day comes along without the crock pot filled with corned beef and cabbage!

Crock Pot Corned Beef and Cabbage
Ingredients

This recipe looks wonderful! But I am a little confused, the directions talk about pouring beer over the meat, but the list of ingredients doesn’t mention beer!
I don’t always use the beer. I will fix that!! But the beer may be used in addition to the cup of water.
I just changed the form of the recipe to add oven as well as crock pot. Must have deleted that!! I will add it back now. Thanks for pointing that out!! Enjoy!!!

Will it work without the beer?
Most definitely Bettye. The alcohol boils off but the flavor definitely remains. If you don;t like the taste then by all means the flavor is not necessary. Thanks for asking! Enjoy your week!
Is a beef brisket the same thing as corned beef? Can I cook a 3lb one 8 hours too?
I got this from the newspaper. “Corned beef starts out as beef brisket and is brine-cured first. The brine-cure is what makes it corned beef and that curing process is where it gets its color from. At stores, beef brisket will be labeled beef brisket and have a good amount of fat on it. Typically, it’s a pretty big piece of meat.Aug 14, 2017” the flavor would be different but it will still work. I would check it at 7 hours, but bades on rolled roast I have slow cooked, it will probably take the full 8. Just watch the fluid doesn’t boil away to much and you will be fine. Enjoy!
Do you really cook it on high for 8 hours?
Yes. The juices get to marinate slowly. And the cooker makes the cabbage and corned beef just fall apart. It isn’t as high or as dry a heat as an oven. Enjoy your week.

I use my crock pot for everything! Except noodles. They get soggy and sticky. If I need noodles, I add them just before I serve. This corned beef recipe is to die for!! Have a great week.

I’m embarrassed to say I didn’t realise corned beef is something you can make at home. I thought it just came in a tin (can) ! This looks really tasty and not at all like the tinned stuff !
LOL. I never saw it in a can! It is in a plastic bag, like a turkey or a ham. In the meat area. But not frozen. It is really good. The only thing in a can I eat is tuna. Not even the chunked chicken, or fish things. I would rather skip meat if I had to eat it that way. I agree with you.

Your recipe is the same as what I use, but I usually simmer it all in a large pot. I'm going to try making this in my crockpot this year and see if I like it better. Going to check your soda bread recipe next–thanks!
I used to cook in a stock pot. But I found the slow cooker makes the corned beef juicier and the steam it causes traps the flavors too. I also use a liner and that may help as well as with cleanup. Let me know what you think. The soda bread was good, but I burned it a bit. The raisins added a bit of flavor. I used about half as much but next time I will use the entire amount. Enjoy!! Pili, if you ever do you will be keeping it on top of your counter. Great for days when you want to walk in the door and dinner is ready. Also for hot days when you want a meak without turning on the oven for hours!
That’s a good reason because I use the oven a lot, but not in summer of course. The house is already hot
I am inherently lazy and cheap. LOL. A lot of my posts are not since I figure who would read to heat up gravy from a can?? But I do a lot of simple.

This is exactly how I do it- in the crockpot-and it always turns out fabulous!! Although I usually just do the meat by itself! Don’t the veggies get a little mushy?
And I haven’t tried it with beer! How is it I never thought of that?? Brilliant!

No. It is like adding the veggies for stew. If you put them in the bottom they get the juices from the meat, but not the steam. They get so tender you can cut them with your fork. You need to try it! The beer is good, too!
