
Buckeyes Candies
Have a peanut butter lover in your house or family?
You may think this recipe will feed an army, but in reality it won’t last more than 2-3 days.
These babies are great for taking to a dinner party, bake sale, or just when you have company over to play cards.
These are the INGREDIENTS you will need:
- 16 ounce 4, 16 ounce jars peanut butter
- 16 Ounces 3.5, 16 ounce packages confectioners’ sugar
- 1 cup butter, melted
- 12 Ounce 3, 12 ounce packages semi-sweet chocolate chips
- 2 tablespoons shortening
These are the INSTRUCTIONS for preparation:
- Blend together the peanut butter, sugar and melted butter. Allow to chill in refrigerator.
- Roll into 1 inch round balls and return to refrigerator.
- In a double boiler over medium heat, melt the chocolate and shortening. Whisk together until smooth.
- With a toothpick inserted in the balls, dip them into the chocolate so they look like buckeyes. Place on waxed paper and allow to set in refrigerator.
NOTES:
This recipe can easily be cut in half. Enjoy!!
We frequently make a batch or two of these Buckeye Candies and add them to our Christmas cookie tins.
Buckeyes are technically not a cookie but they scream to be included in your Cookie List!
The combination of peanut butter and chocolate is known to make a chocoholic yell uncle!
You can easily sit down and eat a dozen or two of these candies before you know it. They melt in your mouth!
In order to have enough of the candies to be put in the tins I needed to figure out how to package them quickly in baggies. I put a ribbon on the bags so I could tell if they had been opened.
Then I realized I wasn;t as smart as I thought.
Some of the bags had gone missing!
So now we sit at the table and keep an eye on each other.
Making the tins while everyone was at work or school was very difficult.
There was no one left to keep an eye on me!!
So, now I make an even bigger batch and put together tins for each family member first.
It seems to work as I am able to fill all the tins on my list.
Even trying to hide a batch for when the adults come to gather is difficult.
Adding these to your dessert table won’t disappoint.
Have you ever witnessed a peanut butter chocolate dessert go untouched? Well these won’t get ignored either.
In my home they are pilfered even as they are hardening! So be sure to have plenty around.

Buckeyes have always been a favorite of mine! I can’t eat gluten so cookies and desserts at Christmas time have always been a little tricky. But these are so effortlessly gluten free and everyone loves them! I’ll be mixing up a batch this week for sure.

I love making Buckeyes. I do this every Christmas and New years. I use the smallest ice cream scoop. That I use to make cookies with to make the balls. Yes, they are a little bigger. But it saves time and doesn’t make my wrists hurt. My family loves them.
I use a veggie scoop. But when then dough starts to stick, I usually just use my fingers. Don’t tell on me! ?

Yum! I’m the chocolate peanut butter lover around here and those look so good! It makes a lot. I think I’ll have to wait to make this one for a potluck. Do you know how they freeze and then thaw out? I’d imagine pretty good.
These freeze very well Cheryl. And I warn you, it does make a huge lot. But it is easy to devour 6-10 in a sitting! I have to package them in lots of 5!! Enjoy your week.

That is a HUGE recipe! Wow… and yes, they would go fast here, but that’s a lot of sugar for my family (they would LOVE it. These sound great though and I think I would have to make them when I am also taking them somewhere. 🙂 Then we would have plenty.. and could also share them.
