Banana Bread Muffins Gluten Free. These muffins are so moist and delicious! They came together very fast and really you don't need a mixer at all. We loved them and your family will too!

Banana Bread Muffins Gluten Free

These muffins were so moist and delicious!

I couldn’t believe how well they turned out.

They came together very fast and really you don’t need a mixer at all.

Since my granddaughter needs to be folic acid free as well as gluten free this recipe was really a great find.

It is hard for her when she is around other children at school. She really wants to have a sweet in her snack now and then.

This muffin just fit the bill.

She is great at refusing the offer of “take a bite”. But it is hard since she loves bread and pasta. 

Some restaurants are now offering some gluten free items. But having a treat now and then like these muffins makes her smile.

They only took one bowl, a few measuring spoons, and one measuring cup.

Now that’s my kind of recipe!

Not many dishes at all.

I made a double batch because I know my family when something healthy and homemade is around.

In fact, the first batch is gone already! We loved them, and your family will too.

These are the INGREDIENTS you will need:

  • 4 brown bananas 1 cup mashed
  • 2 large eggs Room temperature
  • 1 cup sugar
  • 1 cup white rice flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt

These are the INSTRUCTIONS you will use to PREPARE the recipe:

  • Preheat oven to 375ºF.
  • Mash the bananas. Add the eggs, sugar, oil and mix well. Dump in the flour, salt, baking soda, baking powder, and cinnamon. Add vanilla until well combined.
  • Fill the muffin wells about half full until done.
  • Bake for about 20 minutes or until a toothpick comes out clean.
  • Let cool about 10 minutes and enjoy!

    I just made these and added 3/4 cup toasted chopped pecans and sprinkled the top with coarse sugar. They are fabulous.! I did let the batter set for 30 minutes before baking so the flour could absorb the liquid better.
    Definitely a winner. Will be making many more times. Thank you.
