
Baked Chicken Breast
Because of the stay at home order we are not going to the grocery store to stock up on groceries.
We decided to use a Kroger app and schedule a pick-up time instead.
What a fiasco!! I used my iPad to order and found it confusing. It kept showing me foods down the line I had thought I had already checked off! When my husband came to rescue me he used his iPhone.
What I was doing was ordering eggs but by different brand and size. You would think they would put them all together. When he ordered, the app combined his and mine. We ended up with 8 dozen eggs. LOL.
The pick-up schedule was a week behind. So we got pretty low on perishables. When the groceries came I immediately went to the meats.
This Baked Chicken Breast recipe was just the ticket. We all topped it differently. I added BBQ sauce and a baked potato. My husband used a spinach base. I finished the homemade bread as well as a nice romaine salad.
This was the best chicken dish I have ever tasted. Even though we were without meat for quite a while!
These are the INGREDIENTS You will need:
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp kosher salt
- 1 tsp freshly ground pepper
- 2 tbs extra virgin oil doe drizzling
- 2 lbs 4 boneless skinless chicken breasts
- 1 small lemon cut into thin slices optional
- freshly chopped parsley optional
These are the INSTRUCTIONS For preparation:
- Preheat oven to 375º.
- In this order drizzle oil all over chicken and generously coat with seasoning mixture, shaking off excess.
- Add garlic powder.
- Then add paprika. Finally top with salt and pepper.
- Bake until chicken is cooked through, or reads an internal temperature of 165º, about 25 minutes.
- Cover chicken loosely with foil and let rest for at least 5 minutes. Garnish with parsley, if using.

Some Common Questions on Cooking Cooking Chicken
Chicken breasts can be really bland. Especially when they are skinless. It doesn’t have to be this way. There are many ways to make them really delicious by adding spices and a bit of love.
At what temperature should I bake chicken?
375° works perfectly. With the spices and paprika it cooks to a nice color and the chicken will cook through nice and evenly.
This is by no means the only seasoning choices you can use.
Craving Mexican? Try 1 teaspoon chili powder, 1/2 teaspoon cumin, and 1/2 teaspoon onion powder. Feeling Italian? Try 1 teaspoon dried oregano and 1/2 teaspoon garlic powder.
Want BBQ? Add your favorite sauce. The flavor combinations are endless. Just don’t overdue it. Want a crunch? Add bread crumbs on top with a bit of your favorite shredded cheese.
Placing chicken breasts over a bed of lemon slices is an easy and affordable way to infuse a ton of fresh flavor. Limes and oranges work well too!
Do I need to cover the chicken while it’s cooking?
It’s not necessary. In a baking dish without with the chicken spaced closely together the chicken should stay nice and juicy.
How long should I bake the chicken breasts?
It depends on the size of your chicken breasts. If they’re large, you’re looking at 20 to 25 minutes. One of the most common mistakes with baked chicken breasts is leaving them in the oven for too long. When cutting into it the juices should run out into the pan. When using a thermometer it should cook until 165°.
Do I need to let the chicken rest?
Yes. Regardless of how hungry you are, let the baked chicken rest for at least 5 minutes before serving. Cut too early, and you might end up a dry and bland chicken breast atop a messy pool of juices.

This is truly easy. It reminds me of the way I used to make Shake And Bake but no bag needed. I have made this a few times recently since all I needed was the chicken.
