It seems I always have bacon in my home. The boys use it on everything. Of course they don’t have health issues… yet.

Bacon seems to be an ingredient many people love to have. Wrapped in asparagus takes away the guilt when you splurge serving this dish.

I love veggies as long as they aren’t boiled. The closer to raw the better.

But asparagus is the one veggies I can eat any way it is served.

And these Bacon Wrapped Asparagus Bundles are one of my favorite ways to serve them.

In fact, asparagus is my favorite vegetable of all.

This recipe is very easy to prepare.

The option of grilling or baking in the oven makes this side dish perfect anytime of the year.

That is real plus when you can grill these veggies at the same time you salmon, chicken or steaks Are sizzling right next to them.

These sre the INGREDIENTS you will need:

  • 1 1/2 Pounds asparagus spears, trimmed 4 to 5 inches long tips
  • 3 Tbs Extra-virgin olive oil, for drizzling
  • 1 Tsp Black pepper
  • 4 Slices center cut bacon or pancetta, any style
  • chopped scallions or chives, optional garnish

These are the INSTRUCTIONS for preparation:

Oven:

  • Preheat oven, if using, to 400 degrees F.
  • Lightly coat asparagus spears in extra-virgin olive oil. Season the asparagus with black pepper. 
  • For oven preparation, place bundles on slotted broiler pan. Bake 12 minutes.
  • Take a quick count of the spear tips. 
  • Divide the total number by four. Gather that number of spears and use a slice of bacon to wrap the bundle and secure the spears together. 
  • Repeat with remaining ingredients.
  • For oven preparation, place bundles on slotted broiler pan. Bake 12 minutes.

Grill:

  • To grill, place bundles on hot grill.
  • cover. Cook 10 to 12 minutes until bacon is crisp and asparagus bundles are tender.

It doesn’t require a lot of ingredients.

And you probably have them all in your pantry right now!

This recipe is for 4 servings but is very easy to adjust. In fact I have a tab in the recipe to make it even easier!

These Bacon Wrapped Asparagus Bundles go well with any type of fresh fish, especially salmon.

Other ideas to complete your dinner are steaks, chicken and pork.

My family even enjoys it with eggs for breakfast or lunch.

You can’t beat bacon!

And paired with fresh veggies it is a win win! Just watch your cholesterol and don’t over do your servings.

    OT-OH, Marilyn! Asparagus is my favorite, too! Prob won’t make it this way, though as I am the only one. Copying it off for my daughter as A is her fave, too. When her dog was a puppy, she had puppy training classes on Sunday afternoon. So she made bacon for dog treats and came to church smelling of bacon. The minister, a pork lover, gave her a hug and said, “You sure know how to attract a guy!” Great family story!
